Chusoku

The Chusoku is the ball of your foot. To correctly use this in a kick you flex the foot forward at the ankle and pull the toes back so that you strike with the ball of the foot.
Commonly this is used in Chusoku Mae Geri and Chusoku Mae Keagi, however this portion of the foot is used a lot when transitioning from one stance to another, when turning and even in some stances such as Kake Dachi.
